Objective Pre-packaged space scallion pancakes are prone to quality deterioration during storage due to starch retrogradation and lipid oxidation, which affects their food safety and sensory characteristics. Therefore, investigating their quality changes during storage and predicting shelf life are of great significance for ensuring the quality of space food. Methods study conducted accelerated shelf-life tests at(37±1)℃ and(47±1)℃ under simulated spacecraft food storage conditions.Comprehensive analyses were performed, including physicochemical properties(acid value, peroxide value, carbonyl value),microbiological indicators(total bacterial count, coliforms),color parameters(L*,a*,b*,c*,h°),and texture characteristics(hardness,adhesiveness,etc.).XRD and FTIR were employed to verify starch retrogradation and lipid oxidation. Results Physicochemical properties:The acid value gradually decreased and stabilized with prolonged storage. The peroxide value increased rapidly at 37℃and 47℃,with samples stored at 47℃approaching the safety limit(0.25 g/100 g)within 40 days, while the carbonyl value exhibited a decreasing trend.Microbiological indicators:All samples met the requirements of GJB 4992A-2012.No microbial contamination was detected initially, with only minor bacterial growth observed in later stages, and no coliforms were detected throughout the storage period.Color changes:During storage at 20℃,the a*value increased by 91.67%,while b* and c* values showed significant increases.Meanwhile,L* and h° values decreased by 7.42%and 8.75%,respectively.Texture deterioration:Overall texture characteristics declined, and XRD and FTIR analyses confirmed aggravated starch retrogradation.Shelf-life prediction:Correlation analysis identified peroxide value as the key factor. The established prediction model had an error margin of less than 10%,with predicted shelf lives of 236,121,and 57 days at 20℃,37℃,and 47℃,respectively.Conclusion This study reveals the quality change patterns of space scallion pancakes during storage. The established shelf-life prediction model provides theoretical and methodological support for quality monitoring of pre-packaged space foods.

The results clearly demonstrate the close relationship between the evolution of microglia and the mechanisms underlying aging.Monitoring the status of microglia can greatly contribute to diagnosing aging and related neurodegenerative diseases.Furthermore, protecting the function of microglia is a viable strategy for slowing down brain aging and preserving brain function. This approach offers a feasible intervention strategy for tackling aging and degenerative diseases. This paper provides a comprehensive summary of the changes that occur in microglia during the aging process. It also examines the impact of these changes in microglia function on neurons and astrocytes in the brain.

Objective To explore the correlation between the clinical nurses’turnover intention and their job satisfaction of their present working status.Method The Mueller/Mccloskey Satisfaction Scales(MMSS)and Turnover Intention Scale(TIS)were employed to implement the questionnaire survey among 531 registered nurses from a hospital in Taishan,Guangdong. Results The total scores on nurses turnover intention and their job satisfaction were(3?34±0?40)and(14?54±1?38)respectively.The opportunity for professional improvement, welfare and income, balance between job and family were negatively correlated with their turnover intention (all P<0?05).Conclusions The nursing administration should look into the conditions of nurse’s turnover intention and their job satisfactions so that they can take effective measures to improve their job satisfaction and decrease their turnover intention.

Aim To investigate the protective effect of rosiglitazone on cerebral ischemia/reperfusion injury inrats. Methods Transient focal cerebral ischemia injury model in rats was induced by occlusion of the right middle cerebral artery for 2 h, followed by 24 h reperfusion. The infarct volume and neurological deficit were determined by the method of TTC staining and the Longa′s score, and used to evaluate the effect of rosiglitazone on cerebral injury. The levels of malondialdehyde (MDA), nitric oxide (NO), activities of superoxide dismutase (SOD), myeloperoxidase (MPO) and nitric oxide synthase (NOS) in brain were measured by spectrophotometer. Immunohistochemistry was employed to assess the expression of intracellular adhesion molucule-1 (ICAM-1). The histopathological change was observed after HE staining. Results Pretreatment with rosiglitazone markedly reduced brain infarct volume and neurological deficit induced by transient ischemia, inhibited MPO activity, as well as expression of ICAM-1; it also decreased NO, MDA levels and NOS activity, increased SOD activity, and improved histopathological injury. Conclusion Rosiglitazone has a protective effect on cerebral ischemia/reperfusion injury through inhibiting inflammatory process and lipid peroxidation.
