BACKGROUND/OBJECTIVES: This study examined factors associated with vegetarian orientation among adults in Seoul, with a focus on food literacy (FL) and sociodemographic characteristics. SUBJECTS/METHODS: A cross-sectional analysis was conducted using data from the 2023 Seoul Food Survey in Seoul, South Korea. The study included 3,592 adults aged ≥ 18 yrs, who were categorized into vegan, lacto-ovo vegetarian, pollo-pesco vegetarian, flexitarian, and omnivore groups. FL was assessed using a 33-item scale covering 3 domains: nutritional and safety, cultural and relational, and socioecological. Descriptive statistics, general linear models, and logistic regression analyses were performed. RESULTS: Among the participants, 16.0% followed a vegetarian-oriented diet, with flexitarians comprising the largest subgroup (10.9%). Vegetarian orientation was positively associated with being female (odds ratio [OR], 1.41; 95% confidence interval [CI], 1.05–1.90), age of ≥ 65 yrs (OR, 2.51; 95% CI, 1.50–4.21) and having a college education (OR, 2.51;95% CI, 1.78–3.53). Negative associations were found for higher household income (≥ 5 million KRW/month) (OR, 0.63; 95% CI, 0.47–0.85) and low food security (OR, 0.33; 95% CI, 0.24–0.44). Vegetarian-oriented individuals had higher FL scores, particularly in the socioecological domain. In the multivariable models, higher FL scores remained significantly associated with vegetarian orientation. Health management (63.8%) was the most commonly reported motivation. CONCLUSION Gender, age, educational level and FL in the socioecological domain were significantly associated with vegetarian orientation. Our study findings underscore the need for policies and programs that promote sustainable diets tailored to specific sociodemographic groups with varying FL levels.

Objectives: This study aimed to examine the current status of foodservice management and nutrition education practices, and the needs for individuals with developmental disabilities in welfare centers in Seoul and Gyeonggi, South Korea, and to compare the differences according to dietitians’ level of understanding of developmental disabilities. Methods: A cross-sectional survey was conducted among dietitians working at 65 welfare centers, and data from 45 centers were analyzed. The questionnaire assessed general characteristics, foodservice operations, nutrition education practices, perceived needs, and the understanding of developmental disabilities. Participants were classified into high- (n = 17) and low-understanding (n = 28) groups based on their self-rated understanding of developmental disabilities. Data were analyzed using IBM SPSS Statistics 29.0 (IBM Corp.). Results: All centers provided one daily meal (lunch), with one cook serving an average of 116 individuals. Only 11.1% of centers implemented nutrition education, primarily limited due to insufficient time and low expectations regarding the effectiveness of nutrition education. Overall, no significant differences were observed between the two groups in most aspects of foodservice management and nutrition education practices, although some specific items showed significant differences. The high-understanding group reported a significantly greater perceived need for nutrition education and placed higher importance on rapport-building and situational response skills. These findings suggest that structural constraints, including staffing, budget, and limited resources, may play a greater role than individual- level understanding in shaping foodservice and nutrition education practices. Conclusion Welfare centers showed limited capacity to provide tailored foodservice and systematic nutrition education for adults with developmental disabilities. Strengthening staffing standards, improving foodservice environments, and developing standardized educational materials that consider communication levels are necessary. Moreover, expanding professional training opportunities for dietitians and establishing institutional support systems are essential to enhance sustainable nutrition education practices.

SUBJECTS/METHODS: We conducted an online survey spanning April 20–26, 2023 that was administered to 500 adults aged 35–64 yrs who were living alone in Korea. The questionnaire included questions regarding general information, eating habits, cooking environment, dietary competencies, cooking skills, and NQ. The results were stratified according to sex and age. RESULTS: Middle-aged adults who were living alone responded that the main reason they skipped meals when eating alone was “because meal preparation is a hassle.” Middle-aged adults living alone consumed fewer vegetables, fruits, and milk than the recommended levels. The dietary competencies of the participants were 3.14 out of 5.0, and their cooking skills were 3.77 out of 5.0. Female had significantly higher scores for most items than male (P < 0.05). In addition, after adjusting for confounding factors, the odds of a high NQ score in the group with high dietary competencies was 3.75 (95% confidence interval [CI], 2.15–6.55; P for trend < 0.001), and the odds of a high NQ score for participants with higher cooking skills were 3.99 (95% CI, 2.27–7.02). CONCLUSION These findings provide fundamental data for developing tailored nutrition education programs for adults aged 35–64 yrs living alone, considering age and sex differences.

Higher digital food literacy (OR, 0.63; 95% CI, 0.41–0.97) and food environment satisfaction (OR, 0.38; 95% CI, 0.20–0.74) were associated with a lower likelihood of food insecurity. CONCLUSION These results suggest that policies aimed at improving food security for the elderly in Seoul should prioritize those living alone. Educational programs designed to enhance the ability to purchase online food, use self-service kiosks in restaurants, and use food delivery apps would effectively decrease food insecurity among the elderly in Seoul.Furthermore, policies aimed at improving the food environment may also help reduce food insecurity among this population.
