Carbohydrate intake is decreasing along with the reduction of rice consumption among the Korean population. There is an increasing trend of diet-related degenerative diseases with the increased consumption of animal food, and therefore, the increase of animal food intake can be considered as one of causes of the diet-related disease. The objective of this study is to investigate the differences in rice preference and breakfast patterns between the subjects have breakfast regularly and those skipping it. One thousand participants were selected by the stratified sample method from the primary, middle, high school and college, and company workers from 24 cities of Kyeonggi-do. The interviewing procedure was carried by regional home extension workers. Approximately half participants (49.9%) were under the age of 20. Although 86% of the subjects considered eating breakfast good for health. only 46.4% of the subjects had breakfast regularly (HB). The rest of them skipped breakfast (SB) more than twice a week. The proportion of subjects hiving no breakfast were 9.3% of male and 12.2% of female subjects. The main reason for not having breakfast was due to the limited time. For their breakfast 85% of the HB ate boiled rice with the side dishes. More subjects in SB (27.8%) preferred the boiled rice with various grains for breakfast than those of HB (21.8%). The subjects in HB (65.5%) preferred boiled plein rice more than those of SB (56.9%). In cases they must have breakfast, 47.7% of the subjects wanted rice with the side dishes, 24.2% preferred rice ball or rice roll with laver, 10.5% preferred a rice beverage. More subjects in HB (59.8%) wanted rice with side dishes than those in SB (36.9%). It was found out that selecting rice at the breakfast is still the main choice. Diverse ready-to-eat rice menus have to be developed to increase the rice consumption, specially to increase breakfast eating frequencies of SB through saving time and effort.

This study was carried out to evaluate high-school students' nutrient intakes according to the status of depressive trends, and to analyse the in physical and mental health status. The volunteers were 560 high school students selected from 8 provinces, but 511 students were analyzed. A was used for evaluation, The questions were composed in consideration of socio-demographic characteristics, physical health condition by CMI, mental condition assessed by a modified Zung's self-rating depression scale (SDS), and the evaluation of food consumption by a 24 hours recall method. The family situations of the subjects were mostly nuclear family(73%), agricultural work(53%), and having religion(53%). Only 3% of the students suffered depression where as 19% showed depression trendencies. The individual factors that affected their mental condition were family farming and consciousness of academic accomplishment. The health status counted with CMI was 6.2/20 scores. The non-depressed trend group of students had a lower score of CMI than others. The overall nutrient intakes of students were low compared with the Korean RDA for adolescents. The Mean Adequacy Ratio(MAR) of nutrient intakes was only 0.45 +/- 0.23. Iron, vitamin A, and riboflavin intakes were significantly low and correlated with depressive trend score. The result from the regression analysis showed that CMI, study accomplishment, and vitamin A were the most significant factors influencing mental condition. We concluded that Korean rural high-school students were healthy in mental condition and showed lower rates of depression academic. For there more we could say that the intakes of iron and vitamin A also influenced mental health. Findings confirmed the need of becoming hopeful job of farming and better nutritional status. These situations would be necessary for students to ameliorate the quality of rural living.

The purpose of this study was to compare the dietary habit and nutrient intakes of Korean farmers according to their different family patterns and farming types. Food and nutrient intakes were obtained by food frequency method. The subjects(male 35%, female 65% : mean age, 48+/-11 years) were compared 46% of nuclear family, 59% of 3-4 person of family size ; 50% of middle-scale farming ; 54% of rice farming. Sixteen percent were over 60 years old group. In aspects of dietary habit, farmers of medium size farming and 10-20 years of farming experience frequently skipped meals. But their appetite was better than small farm famers. Dinner irregularity was more frequent in their group of 3-4 person families. The numbers of food intake were significantly different according to family pattern. Nuclear family groups consumed more kinds of foods. The mean energy intake was 2000Kcal/day, with PFC ratio of 19 : 16 : 65. The energy and nutrient intakes showed the same tendency as the food variety. Intakes of calcium and iron were lower than the Korean RDA. Families with over 5 people consumed higher amounts of protein and minerals. Intakes of thiamin, niacin, and vitamin E were better in large families and large-scale farming groups. As compared with the PMS ratio, the level of monounsaturated fatty acids as higher than saturated FA. The lipid intake was also better in large families and large-scale farming. The results suggest that dietary habit and nutrient intakes were different by family pattern and farming types.
