1.EFFECTS OF ZINC ON BURNS HEALING AND CORRELATION BETWEEN SERUM ZINC AND SERUM PROTEIN AND ALKALINE PHOSPHATASE IN BURNED RABBITS

We report herein effects of varying dietary zinc contents on burns healing and correlation between serum zinc and serum alkaline phosphatase (AKP) activity and serum protein in 15% total body surface area (TBSA) of Ⅲ? burned Lop rabbits, serum zinc concentration in the rabbits given a low zinc diet for 2 weeks and those with burns decreased significantly, and further decreased and failed to return to normal in the rabbit with a low zinc diet and burns. On the contrary, serum zinc was recovered rapidly to normal in the groups fed an adequate zinc diet.Similar changes were found in serum AKP activity.Postburn total serum protein and albumin contents were markedly decreased and did not return to normal on d 15. Burns healing in the high zinc group was over 10 d faster than that in the low zinc group. Serum zinc was found to be well correlated with serum AKP activity and serum protein. These results strongly suggest that zinc migt be a factor benefiting burns healing. We conclude that serum AKP activity could be used as a diagnostic criterion of postburn hypozincemia as well as a valid index in the assessment of the effectiveness of supplemental zinc.
2.Studies on Mutagenicities of Soy Sauce with Nitrite and Effects of Nitrite Concentrations on Mutagenicity of Soy Sauce

The mutagenicities of 40 kinds of soy sauce treated with 50 mmol/L nitrite, at pH 3.00, 1 h, 37℃ were detected on S. typhimurium TA 98 and TA 100. 38 kinds of soy sauce showed significant direct-acting mutagenicity toward 2 strains without S9 mix; and other 2 kinds presented indirect-acting mutagpnicity with S9 mix. The mutagenicities of retail soy sauce were markedly higher than that of the bottled, and 1 ml of samples of former induced more than 100 000 revertants of TA 100 without S9 mix. When No. 15 soy sauce was incubated with 1, 2, 3, 4, 5, 10 and 50 mmol/L nitrite, the equivalent of 1 ml of soy sauce induced 3384, 4452, 4823, 5400, 6792, 7536 and 10956 revertants, respectively, to TA 100 without S9 mix.

Objective To analyze the development status worldwide of nutriology,so as to provide an orientation of its development in the future.Methods The professional articles published were retrieved by information research methods to predict the focal problem,and to provide the demand and presumption of nutriology development.Results In the past 5 years,some innovative concepts and technics were widely used in nutrition studies,such as nutritional genomics,nutritional proteomics and systematic biology,etc.These technologies made it possible to study the influences of nutrients on gene and protein expression,and reversely,the influences of gene changes in nutrient related disturbances in metabolism.Advances in clinical nutritional therapy provides patients with a variety of clinical treatment and the possibility of earty rehabilitation.At present,there are some problems in the fields of nutritional therapy in our country,such as a lack of resource of professional staff,imperfect education system,deficiency in understanding the importance of nutriology,and the lag of standardization and normalization of nutrition information.Conclusions The progress of nutriology in coming five years should lay stress on the parallel development of individual and nationwide health level.A series of studies in molecular biology and systematic biology will upgrade the national physical quality and the basic health condition of population nationwide.
8.Study on evaluating the promote effect of danisco products on bifidobacterium lactis Bi07 and lactobacillus acidophilus NCFM on physical intestinal canal microbial eco-system

Objective To evaluate the promote effect of Danisco products Bifidobacterium Lactis Bi07 & Lactobacillus acidophilus NCFM on physical intestinal canal microbial eco-system.Methods A 3-week randomized trial was conducted in 400 healthy persons aged from 25 to 45 years,with a male to female ratio of 1∶1,they were randomly divided into 2 groups: placebo group and probiotics group.Each group takes the corresponding products 100 g twice everyday at 10 a.m.and 4 p.m respectively.Results Digestive system on microbial eco-system was effectively improved.The viable count of Bifidobacteria and Lactobacillus was significantly increased.The viable count of Clostridiumperfringen was significantly decreased.Conclusions Significant effectiveness on physical intestinal canal microbial ecosystem were proved by intake Danisco probiotics products 200 g per day for 21 days.
