Abstract:
A method for the determination of vitamin C (VC) in fruits and vegetables by dye paper test with Dual-wavelength thin layer chromato-scanner was introduced. The method was more simple, accurate and reliable than the ordinary 2,6-dichloroindophenol titration method. The correlation between the value of peak area (X) and the concentration of VC(Y) could be expressed as follows:Y = BX + A, r=0.9971. The recovery rate (average) of VC added to fruit in the range from 0.25 to 0.55 mg was 99.0% with CV of 3.72%.
