CARCINOGENICITY OF MOLDY FOODS FROM LINXIAN COUNTY A HIGH-RISK AREA FOR ESOHHAGEAL CANER

Abstract:
Our studies on etiological agents of esophageal cancer in the high-risk area indicate that dietary factors play an important role in the development of this malignant disease. Some staple foods in Linxian county, Henan Pravince, such as cornbread and pickled vegetables, are frequently tainted by fungi. The formation of carcinogenic nitrosamines was demonstrated in cornbread inoculated with Fusarium moniliforme or other fungi following the addition of small amount of NaNO2 after the incubation. Feeding rats with moldy cornbread alone could induce fore-stomach carcinoma indicating the carcinogenic effect of Fusarium mycoto-xins. Pickled vegetables are heavily contaminated by Geotrichum candidum and other fungi. Our recent work showed the presence of a nitroso compound, Roussin red, Benzo (a) pyrene (BaP) and other polycyclic aromatic hydrocarbon compounds (PAH) in Linxian pickles. Thus the moldy foods may provide carcinogens and promotors, i.e. nitrosamines, mycotoxins, Roussin red, BaP and other PAH, etc. There are contributing factors in the environment, including nutritional, deficiency of animal proteins and fat; deficiency of vitamins A, B2 and C;high level of nitrates and nitrites in water and foods; low molybdenum, zinc and imbalance of trace elements; as well as indoor air pollution during winter months. The com- bined action of dietary potential carcinogens and contributing factors may account for the high incidence of esophageal cancer in Linxian area.
